Creamy Vegan Tomato and Red Pepper Pasta

Sauce ingredients

½ cup almond milk
4 gloves of garlic
½ cup cashews
1 tablespoon tomato paste
1/2 tablespoon vegan butter
1 cup of strained tomatoes
½ red pepper
½ teaspoon of pepper

Other Ingredients

1/2 tablespoon vegan butter
6 mushrooms, chopped
½ a package of angel hair pasta
a pinch of parsley

Instructions

In a pot, bring water to a boil

Once water is boiling, add pasta into the pot, reduce to medium heat and cook for 6-7 minutes

In a high speed blender, blend all the ingredients for the sauce together and pour mixture into a sauce pan and warm up on a medium heat

In a pan, heat the vegan butter on a low heat and add the chopped mushrooms and cook until desired texture

Add all ingredients together, garnish with a pinch of parsley and enjoy!
