Vegan Everything Cookies


2 cups of oats
1 ripe banana, mashed
1 cup of whole wheat flour
½ cup of vegan butter, melted
½ cup of dark chocolate chips
¼ cup of dried cranberries
¼ cup of raisins
¼ cup of pumpkin seeds
¼ cup almond meal or crushed almonds
¼ cup maple syrup
¼ cup coconut sugar
¼ cup of almond milk
1 tablespoon ground flax
1 teaspoon baking powder
1 teaspoon vanilla extract


Preheat oven to 350 F

In a large bowl, mix the flour, baking powder, flax, oats and sugar together

In a medium sized bowl, mash a spotted, ripe banana with a fork then add the almond milk, vanilla, maple syrup and melted butter together

Add the wet ingredients to the dry ingredients, then fold in remaining ingredients (nuts, chocolate & dried fruit)

Line a baking pan with a non-stick baking sheet and with an ice cream scoop, scoop the cookie batter onto the sheet and bake for approximately 35 minutes until golden and firm
