Fully Loaded Vegan Baked Poatoes

Ingredients

your favourite kind of potatoes (I used russet for this recipe)
fresh green onion, chopped
paprika
vegan sour cream (1 tablespoon of lemon juice mixed with 1 cup of veganaise)

avocado mash

1 ripe avocado, mashed
1/2 an onion, chopped
1/2 lemon, squeezed
1/2 teaspoon of pepper
a pinch of sea salt

garlic & tomato “salsa”

2 tomatoes, chopped
1 clove of garlic, minced
fresh cilantro, chopped
1/2 tablespoon of olive oil

Instructions

Bake potatoes for 1 hour at 375 F

Once fully cooked, cut open and fill with all the amazing yummy toppings!

Other ingredients to add:

coconut bacon
shredded vegan cheese
chili
beans
rice
brocoli
