How to Eat Vegan While Traveling: Meal Three in the JUCY Camper

So all of the sudden we are now in Sedona, Arizona! It honestly felt as if we were just in Joshua Tree looking out of our JUCY Camper Penthouse windows stargazing www.jucyusa.com. We were kind of shocked when we were driving through all of the lightning and thunderstorms on the way to Sedona and while we were in Sedona the sun was hiding! Our plan for Sedona was to check out some of the vortexes on some hikes then to hike again (surprise!) in the early morning the next day. Sedona is a very spiritual place and a very eclectic spot with a large variety of shops, restaurants, tours (and those interesting Pink Jeep tours that stand out like a sore thumb) and of course breathtaking hikes and views. The red rock formations surrounding Sedona are beyond breathtaking. The contrast between the rock and the blue skies is something to be witnessed in person.

If you are going for a short trip through Sedona we recommend hiking Cathedral Rock as well as Airport Mesa hike. There are 7 vortexes I believe (this depends on who you talk to!): Cathedral Rock between the spires, Cathedral Rock along the Templeton Trail between Cathedral Rock and Red Rock Crossing near Buddha Beach, Airport Mesa, Boynton Canyon, Spaceship Rock, Munds Trail on Schnebly Hill Road, then we stumbled across a vortex at a local shop called the Chapel of the Holy Cross (which is said to be the most powerful… but that’s up to you to determine)

Now you know where to go, but we will help your body get you there…because you need to learn how to eat vegan while traveling and camping!

This was our favourite meal that we created on the road and we made it over and over again. Burrito bowls are a staple that we eat at least once a week when were at home because it’s the perfect lunch or dinner meal. The ingredients are extremely affordable and the prep time is very minimal. Burrito bowls area awesome because they are completely customizable, fresh, healthy, yummy and filling.

What you will need:

Black or Pinto beans
Lettuce, chopped
Onion, chopped
Tomato, chopped
Celery, chopped
Avocado, sliced
Corn
Brown Rice
Sauce of choice (we used Sriracha)

First you’re going to start boiling the rice. While the rice is boiling, rinse out your beans and corn. Then you can start chopping up all your fresh veggies.

Once everything is all chopped and prepped, add all the ingredients to a bowl. Drizzle on your favourite sauce and Voila! You have a yummy burrito bowl in less than 20 minutes made in the back of a JUCY Mini RV.
