Quinoa and Chocolate Chip Cookies

Ingredients

2 cups all whole wheat flour
2 cups puffed quinoa
1 cup coconut sugar
1 teaspoon baking powder
1/2 cup vegan butter, softened
1/2 almond milk
1/2 banana, mashed
1/2 cup vegan dark chocolate chips

Instructions

Preheat oven to 350 F

In a large mixing bowl, mix together flour, baking powder and sugar

In a small bowl mash banana with a fork

In a small mixing bowl, melt butter and add almond milk

Add the mashed banana in with the butter and milk, mix thoroughly and add into the large bowl with the dry ingredients

Fold in puffed quinoa and chocolate chips

With an ice-cream scoop or small spoon, scoop cookie batter and place evenly on parchment paper on a cookie tray

Bake for 20 minutes

Let cookies cool for 10 minutes before serving and enjoy!
