Vegan Almond Cookies


2 cups whole wheat flour
1 cup coconut sugar
1/2 cup almond meal
1 tablespoon ground flaxseed
1/4 cup almonds
1 teaspoon baking powder
1/2 teaspoon baking soda
1 tablespoon vanilla extract
1/2 cup almond milk
1/2 cup vegan butter, softened


Preheat oven to 350 F

In a large mixing bowl, mix together flour, baking soda, baking powder, almond meal, flax and sugar

In a small mixing bowl, melt butter and mix with almond milk and vanilla extract

Add the wet ingredients in the small bowl into the large bowl and mix together

Fold in almonds

With an ice-cream scoop or small spoon, scoop cookie batter and place evenly on parchment paper on a cookie tray

Bake for 20 minutes

let cookies cool on a baking rack for 10 minutes and enjoy!
